The first few weeks of a new school year can be pretty hectic. You’re trying to balance everyone’s new schedules, homework, practices and more while working and taking care of the family. The last thing you need to worry about is what’s for dinner. Here are some quick and easy weeknight options that are both healthy and delicious (oh and did we mention quick?)
One of the best investments you can make for your kitchen is a slow cooker. This isn’t your mother’s crockpot from the 1970’s. Slow cookers have come a long way. There are so many recipe options out there and all you have to do is put the ingredients in, set it and come home to a home-cooked meal. Some great choices are hearty stews with lots of veggies, chili, barbequed pulled pork, chicken dishes and soups (perfect for the upcoming chill of fall). If you need some creative ideas, there are a ton of websites that have quick and easy recipes.
Another idea is planning a meal around a theme night – such as tacos, pizzas and more. You can prep most of the ingredients the night before and set up an assembly-line, buffet-style where the family can pick and choose their favorite toppings and fillings for themselves. Throw in a side salad and you have a perfectly balanced dinner.
Make the task of packing lunches easier on yourself. On weekends, ask the kids to come up with a list of what they’d like for the week then let them help shop for and prepare the food. When kids have the chance to be involved in the process, they can take ownership of it and be proud of their accomplishments. Here’s to a wonderful new school year!
